Watermelon Mint Salad

A summery mix of watermelon and berries infused with ginger and mint.

Ingredients

  • 1 medium Watermelon Use a Seedless Watermelon.
  • 2 lbs Strawberries
  • 2 cups Blueberries
  • 4 tbsp Ginger Syrup I like the one by Ginger People.
  • 8 whole Mint Leaves I keep a mint plant in my kitchen for easy access mint leaves.

Instructions

  1. Cut the watermelon in half.

    Seedless Watermelon.
  2. Using a melon baller, scoop out both sides of the watermelon into as many balls as you can and add to a large mixing bowl.

  3. Wash and hull strawberries. Cut in half and add to the bowl.

    Strawberries.
  4. Wash blueberries and add to the bowl.

    Watermelon, Strawberries and Blueberries.
  5. Wash and pat dry mint leaves. Cut mint leaves and add to bowl.

    Mint Leaves.
  6. Add ginger syrup to bowl.

    Ginger Syrup.
  7. Mix together all ingredients and make sure to spread out the ginger syrup and mint leaves throughout the bowl.

    Watermelon Mint Salad.
  8. Cover with plastic wrap and chill in refrigerator.

  9. Option: Serve with non-dairy whip cream or cool whip.
