It is summer in Seattle and that means barbecues, days spent floating on Lake Union and spending as much time as possible in the sun before it disappears for nine months. My good friend invited me to a barbecue and asked that I bring a refreshing salad. She said that everybody was going to bring green salads that might wilt in the sun. I thought about it and a fruit salad seemed like a great dish to bring. I didn’t want to bring a boring fruit salad and I wanted something that was refreshing, as requested. I ended up creating my new favorite Watermelon Mint and Ginger Fruit Salad.
I went to the store and noticed a beautiful seedless watermelon. I love strawberries so I added those. I also bought some blueberries and mint leaves.
I got home and mixed everything together and tossed the fruit with mint. Something was still missing. I wanted something with a bit of flair. I added some Ginger People Ginger Syrup little by little and it ended up being the perfect addition to the salad.
It’s great for bringing to a party or barbecue, serving at home or bringing to work. I have been bringing this on the plane with me and it’s an ideal snack while airborne. If you are traveling, try throwing this into a plastic container and bringing it with you.
This recipe is also simple and quick to make-it can be done in 10 minutes.
A summery mix of watermelon and berries infused with ginger and mint.
Cut the watermelon in half.
Using a melon baller, scoop out both sides of the watermelon into as many balls as you can and add to a large mixing bowl.
Wash and hull strawberries. Cut in half and add to the bowl.
Wash blueberries and add to the bowl.
Wash and pat dry mint leaves. Cut mint leaves and add to bowl.
Add ginger syrup to bowl.
Mix together all ingredients and make sure to spread out the ginger syrup and mint leaves throughout the bowl.
Cover with plastic wrap and chill in refrigerator.
Option: Serve with non-dairy whip cream or cool whip.
